Egg Puff
Preheat oven to 450 °F
In Cast Iron Skillet:
Melt 1/4 cup butter
In Food Processor, blend:
4 eggs
1 cup milk
1/2 tsp almond extract or 1 tsp vanilla
Then add 1 cup flour (1/2 cup at a time, blending well after each addition)
Pour batter into center of skillet
Lower oven to 425 °F
Bake 20-25 minutes (check after 15 minutes) or until puffed and slightly brown
