Air Fryer Cherry Cheesecake Egg Rolls

INGREDIENTS:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup cherry pie filling
8 egg roll wrappers
1 egg, beaten (for egg wash)
Powdered sugar (for dusting)
Cooking spray
INSTRUCTIONS:
- Prepare the filling: In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth and well combined.
- Assemble the egg rolls: Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the cream cheese mixture onto the center of the wrapper, and top with 1 tablespoon of cherry pie filling.
- Fold the egg rolls: Fold the bottom corner up over the filling, then fold in the sides. Brush the top corner with the beaten egg and roll up tightly to seal.
- Preheat the air fryer: Preheat your air fryer to 350°F (175°C) for 3 minutes.
- Air fry the egg rolls: Lightly spray the egg rolls with cooking spray and place them in the air fryer basket in a single layer, leaving space between each one. Air fry at 350°F (175°C) for 8-10 minutes, turning halfway through, until golden brown and crispy.
- Cool and serve: Remove the egg rolls from the air fryer and let them cool for a few minutes. Dust with powdered sugar before serving.
